If its a M55 in .308 I would shoot it as it is.

The M55 is a lovely rifle and I do regret not getting one when I had the chance. Personally I think it would be wrong to chop it up as they are quite scarce albeit reasonably cheap as well.
Is this to replace the AI?

Is the barrel fluted ? It could well be an m65 super sport which were made on the long action but chambered in .308win. It will be a full length magazine but with a spacer fixed inside the front of the mag to accommodate the short .308 rounds . If you don't need the mag I'll happily buy it but it would IMHO be sacrilege to f_ck up such a beaty of a rifle - I've got one - I know.

Barrel is not fluted but it has open hunting sights on it

I have a M65 in L/H, had it for years. It started off as Deer/Fox rifle then had it converted into a target rifle, because having trouble getting leftie T/R, now it has been reconverted into F/class. Never thought of getting rid of it. I had it serviced when reconverted and was told that the barrel was still in brilliant nick, no need to change it.
I would say go for it.
